Causa Rellena is a refreshing Peruvian dish from Lima which  is made of layers of cooked, mashed potatoes filled with a variety of vegetables like avocado, onions, sweet corn, tuna or chicken. Peruvian Lomo Saltado is a delicious Peruvian stir fry dish with chicken, chips, onion, tomatoes and soy sauce, sprinkled  with fresh chopped coriander and garnish with rice. Other Peruvian Dishes

Aji de Gallina. Shredded chicken cooked with a sauce of milk, onions, chilies, garlic, turmeric, walnuts and thickened with de crusted white bread.

Papa a la Huancaina. Potatoes slices served with a  spicy sauce made with Peruvian chillies, milk and cheese and garnish with olives, lettuce and egg.

Papa Rellena: meat-stuffed mashed potato  The mashed potato is  cut in a circle and then stuffed with ground meat and spices then deep fried until they are crispy brown.

Escabeche de pescado: fry fish seasoned with onions, aji amarillo (Peruvian chillies) and vinegar served with sweet potatoes.

Seco de frejoles. Well seasoned beans with a well cooked lamb stew in coriander and green peas served with white rice

Carapulca. Made from dried and diced potatoes cooked with pork, steak and Peruvian spices, garnish with white rice.

Rocoto Relleno. Baked stuffed Rocoto peppers (extremely hot when not cooked) with meat, onions, peanuts, egg whites and milk.

Chicken soup: breast chicken with garlic, oregano, spring onions and pasta.

Anticuchos: marinated grilled beef heart in brochettes, deliciously spiced.

Tiradito. Similar to Ceviche though the fish is cut into strips instead of the chunks and it is made without onions giving it a lighter flavour.

Parihuela. Fish, shrimp crabs, mussels and octopus soup with different spices that make this dish the favourite of all Peruvians.
